I like beetroot in a sandwich. However, its the kind of sandwich you need to eat straight away and not make in the morning to take to work for lunch. Otherwise you will end up with it leaking beetroot juice through all the bread and having soggy bread

Pickled beetroot and cheese makes a smashing sandwich.  You should try Branston's Beetroot Pickle to make sandwiches with as well - lovely with ham.

If you want a weird combination, I've found those Golden Wonder Chip Shop Curry Pot Noodles are quite palatable with either a couple of spoons of coconut milk powder in to make a Korma variant, or a spoonful of peanut butter to make a Satay variant.  Either option thickens the mixture pleasantly.

Absolutely, but I tend to treat all sandwiches as 'eat now'.
If I take sarnies to work, they rarely make it past 10AM.
I got it this morning from one of the accounts girls, when I was eating a tuna sarnie at 10AM.

Peanut butter & sugar puffs sandwiches. Can't beat them.

Not my invention, but I love this combination:

White bread
Smooth peanut butter
Cheese (cheddar works well, but other hard cheese can be as nice)

if you like all of the above, you really need to try it.
