Things like email and the App store will be checking during the day for updates, so they will be using some data, although I would expect that to be kilobytes, not a massive amount of data usage.

Wifi is for your home wireless and would help save battery but wont stop the phone using GPRS and 3G for connecting to the internet. And data roaming is only used when abroad.

Usually heavy usage is down to the obvious, pics, vids or music streaming though I've just been through a similar problem on a different phone and found out my daughter practically lives on Facebook.
What's your allowance data allowance on the Iphone?

I used to be with it, but then they changed what 'it' was.
Now, what I'm with isn't it, and what's 'it' seems weird and scary

You can turn off 3G in the menu too, as that may be how it's accessing.
Which network are you with? Most have some form of add-on internet usage that will cost you but may be much less than you are just now as I'm guessing you're comment of £1 per day is that your tariff has zero internet allowance so the first time every day it accesses the net you get the £1 charge?

can't really add to whats allready been said, but maybe the data bolt on would suit you ? not looked for ages, but it used to be £7.50p a month, & was available on both contract & P&G..

Yes only on PAYG so get charged a total of £1 normally if used per day but dont use it that much to be honest, well not a £1 a day!
Its now stopped as of Yesterday morning!
May have been email related will turn things on each day to try work out what it is!

Only have the very 1st iphone @ moment but will be getting the iphone 4 soon
